Banana Chocolate Chip Muffins

Looking for a great tasting muffin that checks all the boxes? This is it. I love these because they have great fiber and taste amazing. I usually eat these as a snack or in the morning with my protein coffee.

This is where I could one by one tell you about all the things you can do to alter this recipe or where I got each ingredient, but that is annoying. So let’s get into it!

Baked Oatmeal – Banana Chocolate Chip:
Makes 6 muffins

Ingredients

  • 1 C oats

  • 2 eggs

  • Whole Banana

  • ½ C milk of your choice (I like greek yogurt)

  • 3 T Hemp Hearts (optional, but add good protein)

  • Dash of baking soda

  • ½ C chocolate chips (I think dark chocolate works best)

  • 1 tsp vanilla extract

  • 2T of Swerve Brown Sugar

Instructions

  • In a blender or food processor combine all ingredients except chocolate chips. If using brown sugar add 1T of the swerve brown sugar. 

  • Stir in dark chocolate chips.

  • Pour into muffin cups. 

  • Bake at 350* till golden brown. 

  • Remove from oven and let cool completely. 

  • Store in fridge
